PW’s Steak and Onions
Well. Hello there. I’ve missed you!
The last couple weeks have been absolutely crazy. With Chris coming home from Europe, celebrating his birthday, packing up our house and carrying everything across the street, starting to unpack, then escaping to Bar Harbor for the long weekend… well, I haven’t had much opportunity to cook. Finally that changed last night! We broke in the grill, and had some turf to offset all the surf we’d been eating in Maine! Pioneer Woman posted this recipe sometime last week, and somehow it’s yum-appeal and ease catapaulted it to the top of the ‘to-make’ list. So here we are. It was delicious and worth (almost) every butter, cream, and cheese laden calorie. Tomorrow I’ll show you what we had with it–had to sneak in some greens somehow.
Also, in the last couple weeks I seem to have forgotten how to use a camera properly so please excuse these pictures, I’ll try and jump right back on the horse with tonights dinner!
PW’s Steak and Onions (serves 2-3)
1/4 cup Butter (half a stick)
1 large white Onion, sliced into medium-thick strips
3/4 cup Cream (I used half & half)
1/2 cup Bleu Cheese
2 Steaks (cut of your choice)
S&P the steaks and throw them on the grill, and melt the butter in a large skillet while the steak sizzles. When the butter is melted and hot, add the onions and cook until they are brown and translucent and delicious looking! This will take a little while. Then pour in the cream. Stir some more and let the sauce reduce. Just a little. Then add the bleu cheese and stir to combine. Sprinkle S&P over everything and let it simmer for just a minute longer. I did this on the side burner on our grill so that I could keep an eye on the steak. If you’re really good you can time it so the steak and the onions are done at the same time.
Spoon some onions and sauce onto a plate and plop the steak right on top. Dive in! You won’t be sorry. Until your pants don’t fit the next day.
