Broccoli Feta Pasta
So I’ve been getting a lot of great tips lately from Apartment Therapy’s food/kitchen blog, www.thekitchn.com, and when I saw this recipe on there I thought I absolutely had to try it – and conveniently, we had everything on hand already! The ingredients are few and common, but they produce a sauce flavor and texture that’s delicious and unexpected, and new! It paired perfectly with a $5 Savignon Blanc we happened to have on hand from a recent trip to Trader Joe’s, too!
Broccoli Feta Pasta (serves 3-4, from The Kitchn)
1 Shallot, diced
1/2 lb Broccoli, cut into bite sized pieces
1 clove Garlic, smashed and diced
1/3 cup Fresh Parsley, chopped
2 Tbsp Lemon Juice
1/2 cup Feta Cheese, crumbled

Saute the shallot and garlic in some oil over medium-high heat. Meanwhile, steam the broccoli until soft. Combine the broccoli, shallot, garlic, and everything else in a blender or food processor and blend, adding 1/4 – 1/2 cup water as the blades turn. Use plenty of salt and pepper – might even throw in some hot pepper if you’re into that! Toss with pasta and serve hot! You can almost see the steam coming off mine in the pic!
