Chocolate Peanut Butter No-Bakes



No Bake cookies are those special kind of cookies that you can have a craving for, and satisfy that craving within minutes. We usually make buckeyes around Christmas time, and these oatmeal ones are a good cookie for the summer, when you don’t want to turn on your oven. Not to mention that they’re both chocolate + peanut butter… You can’t argue with those flavors. They’re incredibly easy to make, and a great snack for road trips. Speaking of which, by the time you read this, I’ll be home in Upstate NY at a wedding! Lots of traveling these past weekends!

Chocolate Peanut Butter No-Bakes (makes 24)
2 cups sugar
1 stick of butter
1/2 cup milk (I used 2%)
1 tsp vanilla
1/4 cup cocoa powder
1/2 cup peanut butter
3 cups oats (quick-cooking)

Combine the first 5 ingredients, through the cocoa powder, in a heavy-bottomed pan. Heat until boiling, then let bubble/boil for 1 minute.


Prepare some wax paper or parchment paper to drop the cookies onto. Remove from heat, and immediately stir in the peanut butter, until smooth. Mix in the oats and quickly drop the mixture by spoonfuls onto the wax/parchment paper. The mix cools fast so if you want nice looking cookies, don’t dawdle! Once they’re cooled, they’re ready to eat!
