Cream Cheesy Tomato Sandwiches

Breakfast is hard. During the week it’s a coffee and fruit or a pop tart at work. But on the weekend, when there’s time, breakfast can be one of the most fun meals to make. It’s a whole new world of traditional ingredients, flavors and dishes. On the weekend we can take the time to make something tasty, and enjoy ourselves eating it. Breakfast on the weekend can even be drawn out to brunch, and it’s actually acceptable to drink champagne before noon(!).  When I saw a recipe for for these on One Perfect Bite I thought they’d be perfect to try this weekend. Unfortunately I mentioned this to Chris before bed, and was then pried from the sheets at an hour far too early on a Saturday to make them.

Cream Cheesy Tomato Sandwiches (makes 4)
2 Beefsteak Tomatoes
6 oz Cream Cheese
2 Tbsp Fresh Basil
2 Tbsp Fresh Parsley
1 tsp Garlic Powder
S&P
1/2 cup Flour
1 Egg, Beaten
3/4 cup Bread Crumbs
3 Tbsp Olive Oil
3 Tbsp Butter

Start by slicing the tomatoes into 8 slices, 1/2 inch thick, discarding ends. Place tomatoes on a paper towel, and sprinkle with salt. Let sit 10 minutes, then blot with additional paper towels to remove excess moisture. Mix together the cream cheese, herbs, garlic powder, and salt and pepper to taste. Spread cheese over 4 tomato slices. Top with another slice. Dunk sandwiches first in flour, then egg, then bread crumbs.

Heat oil and butter in a large skillet over medium-high heat. When sizzling, drop in the sandwiches. Brown lightly on both sides – 3 min per side. Serve warm and eat with fork & knife!

  1. YUM! This looks delicious! I work with Alouette cheese and our Garlic & Herb cheese would be awesome with this recipe. I will be sharing this with my foodie friends!

  2. I made these delicious sandwiches on Sunday, except I substituted the fresh parsley with a tablespoon each of oregano and thyme. They were a delicious side to our dinner!
