Little Bit of Everything Pasta Salad



Happy Monday, everyone! I can’t believe how fast August is flying by. Before I know it we will be in our new apartment with a new kitchen and missing our old roommates and old house. Chris gets home from his Eurotrip this week, then we pack, celebrate his birthday on Monday, and move on Tuesday! It will be a crazy week. Which calls for simple, easy food. Last week when it was too hot to cook, I made pasta salad on Monday and ate it until Thursday. It was perfect – easy, cold, tasty, and plentiful. And the way I made it, contained all the food groups! I was inspired by Miss Ingall’s momma’s pasta salad, some of which she brought with her on her visit. It’s an “everything-but-the-kitchen-sink” kind of recipe. Yum!

Little Bit of Everything Pasta Salad (8 big servings)
Pepperoni, sliced
Broccoli, fresh, chopped
Baby Carrots
Black Olives
Chick Peas
Cheddar Cheese chunks
Feta Cheese crumbles
Parmesan Cheese, grated
Italian Dressing

Mix the meat, veggies, and cheeses together while the pasta cooks. When the pasta is done, drain it and rinse under cold water. Mix in the pasta gently. To serve, scoop out a portion and top with dressing and more parmesan, if you like. Otherwise refrigerate and dress when you’re ready to eat! Told you it was easy.
