Bacon Chocolate Chip Cookies


So I haven’t been spending a ton of time in my kitchen lately (have you noticed?), but I made these this weekend and had to share the ridiculousness. We’re having a cookie-luck at work, and I had a bunch of friends over for a BBQ on Sunday, so I doubled up this recipe and used my friends as guinea pigs on these guys! The list for the cookie thing at work was already pretty extensive but I didn’t see anything containing bacon, and figured that this was my shot. I think they actually turned out great! Not for everybody, but if you like bacon, and chocolate, and the sweet/salty mix, you’ll like these.

And yes, I know, these could probably be on This Is Why You’re Fat. But whatever.

Oh, one last thing. If you’re feeling super ambitious, you can reserve the bacon grease and swap some of the butter for the grease. But… I wasn’t feelin’ that this time around…

Bacon Chocolate Chip Cookies (adapted from Buns In My Oven, makes 3-4 dozen)
2 sticks Butter (1 cup)
1 cup Sugar
1 cup Brown Sugar
2 Eggs
2 tsp Vanilla
2 1/2 cups Flour
1 tsp Baking Soda
1 1/2 cups Chocolate Chips
10-12 strips Bacon, cooked, cooled, diced
Sea Salt (for sprinkling on top)

Preheat to 350, and line a baking sheet with parchment paper or a silpat. Cream the butter and sugar, and add the eggs and vanilla. Sift together the flour and baking soda and stir into the dough. Gently add the bacon and chocolate chips and stir to combine.

Scoop dough by rounded tablespoons onto the baking sheet, and sprinkle each scoop with a pinch of sea salt.

Bake at 350 for 10 minutes or until lightly golden. Cool on the sheet and transfer to a wire rack. Store in the fridge and warm them up when you want one! (Or eat them cold…)
